Dairy-Free Choux Pastry Recipe with Rosemary

- 1 cup boiling water
- 1 branch rosemary
- 3½ ounces olive oil
- 1 cup flour
- 3 eggs
- pinch of salt
- pinch of lime or lemon zest
- flavorings like rosemary leaves or oregano or chives or basil
Place water and rosemary branch in a pot and boil for 5 minutes.
Add olive oil and stir.
Add all the flour at once and stir over medium heat until the mixture forms a ball.
Remove from heat and allow to cool for 10 – 20 minutes.
Transfer to a cake mixer and beat for 5 minutes.
Add one egg at a time and beat well.
Add salt, lime zest and flavorings.
Pipe (or spoon) mixture onto a lightly greased sheet.
Bake in a preheated oven at 375°F for 40 to 45 minutes.
Cool and add your favorite filling.
