This is my mother’s easy homemade bread recipe.
It is fool-proof! Seriously!
I’ve never messed up in the 8 years I’ve been making it.
And the bread rolls are soft and fluffy.
Here are the ingredients you need to make this bread:
- warm water
- flour with baking powder
- herbs (optional)
You can replace the warm water for warm milk if you want a more nutritious bread roll.
As for oil, you can use any type you have on hand. I have used coconut, olive, and grapeseed oil before. You can also use butter if you prefer.
I love throwing rosemary in everything… you can tell by my dairy-free choux pastry recipe with rosemary. The herb is delightful and becomes more prominent in the bread as time passes.
You can use any herb you have in your fridge or garden. Chive is another good option and chive bread rolls are freaking DELICIOUS!!!
Making this Easy Homemade Bread Recipe
Start this recipe by activating the dry yeast.
The warm water should be around 105°F. If the temperature is too low (< 100°F), your dough will be sticky. If it is above 130°F, the yeast will die. So, you are looking for that 105 sweet spot.
Dissolve the sugar and mix in the yeast. Leave for 10 minutes.
The yeast should activate in that time. Here’s a look at mine…
If your yeast isn’t frothy, look at the water surface.
Do you see bubbles rising up?
Yes, that’s great! You can still make this bread. If no, then your yeast isn’t good. Use a newer sachet.
Whisk your eggs and oil together. Add to your yeast.
Throw in your herbs. This, of course, is optional. Chive, parsley, oregano, rosemary and basil are great choices.
Now, mix in the flour.
The flour I use has baking powder mixed into it. So, I don’t need to add extra. If your flour does not contain it, then mix flour and baking powder together before adding to the yeast-egg mix.
Form a soft dough.
Coat the entire dough with the oil.
Cover and leave in a warm area for 45 minutes.
Look at that!
Punch down. Make small dough balls and form your bread rolls.
Cover again and leave in a warm area for 45 minutes.
With 20 minutes to go, preheat your oven at 375°F. This ensures your oven will reach the necessary temperature when you are ready to bake the bread.
Bake for 15 to 20 minutes.
Look at that! Delicious!
Or allow the bread to cool completely and place in freezer safe containers. It will stay for months in the freezer.
Easy Homemade Bread Recipe: Rolls
- 2 cups warm water
- 1 tsp dry yeast (half an 11 g sachet)
- 2 tsp sugar
- 2 tsp salt
- 2 eggs
- 2 tbsp oil (like coconut, olive, grapeseed)
- 4.5 cups flour
- 2 tbsp herbs (like rosemary, chives)
- Dissolve sugar in warm water.
- Add yeast.
- Leave for 10 – 15 minutes for the yeast to activate.
- Add salt
- Whisk eggs and oil together.
- Mix with the activated yeast.
- Add herbs.
- Add the flour and combine to form a soft dough.
- Coat with oil and cover.
- Leave in a warm space for 45 minutes to rise.
- Punch down the dough.
- Make small dough balls.
- Place on oiled trays and cover.
- Leave in warm space for another 45 minutes to rise.
- Preheat oven at 375 degrees Farenheit.
- Bake the rolls for 15 – 20 minutes (until the tops are golden brown).
- Serve hot or completely cool and freeze for later.
